The Bitter style came from brewers who wanted to differentiate these ales from other mild brews, enter pale malts and more hops. Most are gold to copper in colour and are light bodied with low carbonation. Alcohol should be low and not perceived. Hop bitterness is moderate to assertive. Most have a fruitiness in the aroma and flavour, diacetyl can also be present. These are traditionally served cask conditioned, but many breweries have bottled versions.

Ingredients:
3.8kg Pale Ale
450g Carared
450g Carahell
50g Carafa T2
50g of Goldings Hops
30g of Fuggles Hops
Yeast Selection
2 x M36 Liberty Bell Ale Yeast (Dried)
Method:
1. Mash at @ 65C with 17L of water
2. Rest for 60 mins and recirculate
3. Hold mash temp at 77C for 10 mins
4. Sparge with 15L of water @ 78C
5. Boil for 60 mins
6. Add 20g Golding hops at 55 mins
7. Add 30g Fuggle hops at 5 mins
8. Whirlpool for 20 mins and add 30g Golding hops at the start of the whirlpool (Whirlpooling: turn the boil off and either stirring fast/recirculate so it "whirlpools" for the duration. The helps raise the bitterness too)
9. Ferment between 16-22C degrees for 7-10 days with M36 yeast
10. Bottle or keg as usual and enjoy.

To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.
Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
