INGREDIENTS

  • 6.8 kg Gladfield Ale Malt
  • 500 g Gladfield Dark Crystal Malt
  • 300 g Gladfield Light Chocolate Malt
  • 200 g Gladfield Roasted Barley
  • 100 g Gladfield Toffee Malt
  • 100 g Gladfield Wheat Malt
  • 100 g Flaked Barley
  • 40 g East Kent Goldings (or your preferred English-style hop) - 60 minutes
  • 50 g East Kent Goldings (or your preferred English-style hop) - 15 minutes
  • 500 g Maple Syrup (added during the last 15 minutes of the boil) ? Not Supplied
  • x2 Mangrove Jack's M42 New World Strong Ale Yeast or S04

Mashing:

  • Heat 17 Liters of water in your Grainfather G30 to strike temperature, around 68?C (154?F).
  • Add all the crushed grains to the Grainfather's malt pipe.
  • Carefully lower the malt pipe into the heated water and mash for 60 minutes at 67?C (152?F).
  • After the mash, raise the malt pipe and allow it to drain into the kettle.

Boiling:

  • Bring the wort to a boil and add hops according to the schedule mentioned above.
  • During the last 15 minutes of the boil, add the maple syrup while stirring gently to ensure even mixing.
  • Cooling and Fermentation:
  • After the boil, cool the wort rapidly to around 18-20?C (64-68?F).
  • Transfer the cooled wort to the sanitized fermenter.
  • Pitch the Mangrove Jack's M42 yeast and seal the fermenter with an airlock.
  • Fermentation:
  • Ferment at a controlled temperature of around 18-20?C (64-68?F) for the first week, then allow the temperature to rise slowly to encourage full attenuation.
  • Monitor the fermentation process using a hydrometer or refractometer. The target final gravity is around 1.012.

Bottling or Kegging:

  • Once the target gravity is reached and fermentation is complete, you can proceed with bottling or kegging the beer.

Aging:

  • This Imperial Stout will benefit from some aging. Bottle or keg it and allow it to mature for at least 2-3 months, but longer aging can lead to even better results.

To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.

Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
