INGREDIENTS
3.9kgs Pilsner
100g Vienna
50g CaraMunich T1
40g Crystal

WLP029 or M12

METHOD

  1. Add 1tsp CacL2
  2. Add 1/8 tsp Lactic Acid
  3. Mash at @ 63ºC with 17L of water for 45min
  4. Rest for 45 – 60 mins and recirculate
  5. Raise mash temp to 70ºC for 20mins
  6. Raise mash temp to 76ºC for 10mins mash out.
  7. Sparge with 12L of water @ 80ºC 
  8. Boil for 60 mins
  9. Add 30g Crystal at 30mins
  10. Add 10g Crystal at 5 mins
  11. Chill wort to 14-16°c and pitch yeast
  12. Ferment between 16-22º for 7-10 days
  13. Allow temp to rise to 20°c after 4 days.
  14. Bottle or keg as usual and enjoy
