INGREDIENTS
2 x Mangrove Jacks 1.2kg Pure Malt Extract
1.25kg Gladfield American Ale Malt
250g Gladfield Redback Malt
250g Gladfield Aurora Malt
250g Gladfield Shepherds Delight Malt
50g Roasted Barley
100g Amarillo Hops
YEAST CHOICE
2 x Mangrove Jacks M44 US West Coast Yeast
METHOD
- Dough-in grain into 6 - 8L of water at approx 70ºC
- Mash at 66ºC for 60 mins.
- Sparge with 3 x electric jugs (approx. 4.5 litres) of water heated to approx 77ºC
- Raise temperature of wort to boil
- At 60 mins i.e. start of boil, add 10g Amarillo Hops
- At 10 mins remaining add 50g of Amarillo hops
- At 0 minutes turn off the heat, start cooling
- At 80ºC add 40g Amarillo hops (optional whirlpool)
- Soften malt extract pouches in a hot water bath for 10-15 mins.
- Pour cooled wort into fermenter, add malt extract and top up with cold water to 23 litres
- Rehydrate M44 yeast in 200ml of warm water (30 – 35ºC) for 20 – 30 mins.
- Pitch yeast and ferment at 18 - 22ºC until a stable gravity is reached
