Colonial Pacific Pale Ale - All Grain Kit

A True New Zealand Ale using NZ Malts and NZ Hops. Great malt flavour with a citrus, orange and grapefruit finish.

ABV: 5.4%
IBU: 32 
Boil Time: 60 minutes
4.9kg NZ Pale malt
350g Gladfield Light Crystal
180g Gladfield Dark Crystal 
180g Gladfield Gladiator
180g Gladfield Wheat
12g Pacific Gem hops
34g Taiheke hops
15g Nelson Sauvin
35g Taiheke hops
35g Nelson Sauvin hops

Yeast Selection:
Safale US-05

1. Mash with 17L of water at 68ºC for 60 minutes 
2. Sparge with 12L of water at 76ºC
3. Boil for 60 mins
4. At 60 mins add 12g of Pacific Gem
5. At 5 mins add 15g of Nelson Sauvin and 34g of Taiheke hops after the 90 min boil, immediately cool the wort to 20ºC
6. Pitch Safale US-05 yeast and ferment at 18-22ºC until the SG stabilises
7. After 4 days add the 35g of Taiheke and Nelson Sauvin hops and leave in for the next 3 days
8. Bottle or Keg as usual
