Boil Time: 60 minutes
4.9kg NZ Pale malt
350g Gladfields Light Crystal
180g Gladfields Dark Crystal 
180g Gladfields Gladiator
180g Gladfields Wheat
12g Pacific Gem (60 min)
34g NZ Cascade (5 min)
15g Nelson Sauvin (5 min)
35g NZ Cascade pellet hops (dry hopped Day 4)
35g Nelson Sauvin (dry hopped Day 4)

2x Safale US-05

Mash with 17L of water at 68 degrees for 60 minutes 
Sparge with 12L of water at 76 degrees C

Boil for 60mins
At 60mins add 12g of Pacific Gem
At 5mins add 15g of Nelson Sauvin and 34g of NZ Cascade
after the 90 min boil, immediately cool the wort to 20 degrees C
Pitch 2x Safale US-05 yeasts and Ferment at 18-22C for 10days (or until the SG stabilizses)
After 4 Days add the 35g of NZ Cascade and Nelson Sauvin and leaf in for the next 6 days.
Bottle or Keg as usual
